Lebbencs is a rolled, kneaded dough, which is then broken into pieces by hand or cut by machine. The dough, stretched leaf-thin and rolled before drying, was originally made in a cauldron by peasants living in the Alföld, typically by shepherds, and soup or slambuc was cooked from it. These noodles contain 8 eggs for every kg of flour.
